A healthy school picnic with wraps, smoothies and sweets without any white sugar!

Yes! det gick att stå emot sockret!

Det är en process att jobba mot hälsosammare vardagsmat med mindre socker, framförallt till barnen…. men sakta men säkert vänjer dom sig vid smakerna, äter det utan att tjafsa och finns inget annat funkar helt plötsligt den där chokladbollen utan socker väldigt bra….Så ge inte upp för plötsligt händer det!!!

Årets första ”familjeskolpicknick” gick av stapeln häromkvällen och jag lyckades göra en picknickkorg helt utan vitt raffinerat socker, trots min dotters önskemål om Singoallakex, Deliactobollar och läsk.

Istället blev det Caesarsallad wraps (se recept nedan) – Hemlagade wraps är riktigt bra, man fyller dem med massor av grönsaker, bra proteiner, bra fetter och brödet runt utgör endast en liten del av måltiden.  Till det en bra smoothie – simpelt, gott, nyttigt – smart mat helt enkelt.

Och det bästa av allt – barnen var nöjda:)

Yes! it was possible to resist the sugar! It is a hard process working towards healthier everyday food with less sugar, especially for the children. But slowly they get used to the flavours so don’t give up. This years first family-school picnic, I managed to make a picnic basket without any white refined sugar, despite my daughter’s desire for something sweet.

We had Caesar salad wraps, see recipe below. Homemade wraps are really good, you fill them with lots of vegetables, good proteins, good fats and the bread round represents only a small part of the meal. Served with a good smoothie and you have a simple, delicious and healthy meal.

And best of all – the kids were happy:)

 

Picknick korgen innehöll/ Our picnic basket contained:

  • Smoothies (Natural yoghurt, mixed berries, banana, a little honey)
  • Veggie sticks
  • Salad for me as I did not find a glutenfree tortilla bread.

Chicken caesar wrap:

  • Tortilla bread of your choice – we used Santa Marias organic, 40 gr each so we made many small wraps.
  • Cold cooked chicken of your choice, cut in small pieces
  • Roman lettuce, cut in small pieces.
  • Avocado cut in pieces.
  • Bread croutons: take any white bread, preferable without added sugar, cut i squares, marinate in a little olive oil and salt and fry in the pan until crispy. Let cool down.
  • Grated parmesan
  • Caesar dressing:
    • 3 egg or 1 dl cashewnuts for vegan.
    • 1/2 tbs dijon mustard
    • anchovies or 1 tbs kapers for vegan
    • 4 dl rapseed oil
    • 1 dl white vine vinegar
    • 1,5 dl milk or for example cashewmilk for vegans
    • 2 dl grated parmesan or vegan cheese for vegans
    • Salt and pepper.
    • Mix the eggs, anchovies and mustard. Add the oil when the mixer is in high speed, slow down a bit and add vinegar, milk, parmesan, salt and pepper. Mix until smooth.  Taste.

How to make a wrap  

  1. Put one tortilla bread on a flat area

  1. In the middle make a pile of salad, chicken, avocado (approx. 1 tbs each), parmesan (1 tsp) and some croutons.
  2. Pour some dressing over the top.

  1. Fold the bread and make it to a little package, put in the corner of the paper and roll, folding in the edges of the paper meanwhile. Then add some tape or a label. Ready:)
